Lazy at Home Cheesy Ramen With Chilli Oil Egg

Looking for a noodle upgrade? These cheesy noodles go perfectly with a velvety, chilli oil coated egg yolk. With only a few extra steps, your noodles will become even more flavour packed! The cheese helps to add a delicious creaminess to the spicy sauce. A fried egg naturally goes next as a topping but the chilli oil crisp will infuse the noodles with aromatic, garlicky goodness.

I used the carbonara udon Buldak noodles for this recipe but you can try it with your favourite flavour!

Ingredients:

2 packs creamy carbonara Buldak instant noodles

1 cup shredded mozzarella cheese

2 eggs

2 tbsp chilli oil crisp

2 tsp olive oil 

Cook both packs of noodles according to the package directions. Basically, cook the noodles to al dente and drain all but 1/3 cup of water. Add the sauce packs, half the cheese and mix. (Optionally, you can swap the water out for some warmed milk and add a tsp of butter for an even better sauce)

(During the waiting times you will need to work on your eggs)

For the eggs, heat a frying pan with 2 tsp olive oil at medium-high heat. Once heated crack 2 eggs into the pan carefully onto one side of the pan. Let the eggs fry until 80% cooked then add the chilli oil all along the edges making sure to scoop a lot of the solids. Do not add your chilli oil too soon as the cooking process will dull the flavour. 

Plate the noodles and top off with the remaining cheese and chilli oil egg.
