Tiktok Viral Cheesy Rose Sauce Rigatoni

This is the velvety cheesy rigatoni that you’ve been seeing all over Tiktok. Easy to make and so addictive, you will be making it more than once!

Sometimes the issue with TikTok recipes is that they don’t provide the ingredient list or detailed instructions. So, I’ve decided to make it into a full recipe for you to enjoy this trend with me! The ingredients are easy to find and the steps are not too complicated. It’s wonderful after a hard day at work or if you need an impressive yet easy recipe for a dinner party.

Like all my other recipes take the creative freedom to tweak the flavours to your liking. Add fresh chillis for more of a kick or add truffle oil for a special occasion. Make it your own and love your cooking!

Cheesy Rose Sauce Rigatoni

Ingredients:

300g (dry weight) rigatoni

4 cloves garlic minced

1/3 onion or 1 shallot finely diced

3 tbsp olive oil

1 tsp chilli flakes

80ml tomato paste

1 cup whipping cream

1 tbsp butter

1 tsp garlic powder

1/3-1/2 cup shredded mozzarella 

S&P to taste

parmesan + parsley for garnish

Boil a pot of salted water for the pasta. You will need to cook the pasta 1 minute less than the package suggests for al dente while we make the sauce. 

Fry 4 cloves of minced garlic and finely diced 1/3 onion or 1 shallot in 3 tbsps of olive oil at medium-high heat. Once that starts to soften, add 1 tsp chilli flakes and sauté for a minute.

Add 80ml of tomato paste (roughly half a 156ml tin). It is crucial to cook the tomato paste out until it is reduced (thick and darker red) or the flavour will taste off. This will take roughly 8-10mins. 

Pour in 1 cup of whipping cream and stir until incorporated. Plop in 1 tbsp of butter then season with salt, pepper and 1 tsp of garlic powder. ( Season to your taste, add more garlic powder and salt if needed)

Sprinkle the 1/3 to 1/2 cup of shredded mozzarella cheese a little at a time, while stirring, until you get the desired cheesiness.

Transfer with a slotted spoon, the almost al dente pasta, directly into the sauce with a splash of the pasta water. Stir to combine. Plate onto a serving dish.

Garnish with finely grated parmesan cheese and minced parsley.
